White Mexican Rice

Well recently I learned how to to make this rice and funny thing I had been making this rice for a while now I just opted out one ingredient to make white rice instead of the red rice.

I had been wanting to make more then just red rice foe my husband for a long time but this is all I knew. Yes he had other sides just weren’t Mexican sides then.

So we went to a birthday party and there was white rice and hubby loved it. So knew when I went home I was going to try n figure it out. And I did without a recipe. I thought I would give it a try with just taking out one ingredient like I had mentioned. And he loved it. I loved it and even my son loved it and he is not into much Mexican food. He won’t eat the red rice but loved the white rice. Here is my version and I know this is not authentic I’m sure of it( could be for some, things are all made different in different parts of Mexico so could be authentic I wouldn’t know though) When you make this leave yourself ample time because it takes a lot of time to make this if you want to make it correct. Can rush it and not brown the rice as much or soak the rice but then rice won’t be so fluffy then.

Ingredients:

  • 1 cup rice (long gran is what I use)
  • Small mesh strainer
  • 1 1/2 tsp. Onion powder
  • 1 1/2 tsp. Garlic powder
  • 1 heaping tsp of chicken bouillon powder
  • 2-2 1/2 cups boiling water

First you will throughly rinse your rice. Try to rinse til water is clear a bit to get some of that starch off the rice. Then soak it in some water for a minimum of ten minutes.

After the ten minutes then your going to drain the water. The better it’s drained the better the rice will be in your pot of oil. If it’s still really wet then your rice will stick to your pan. You want to fry your rice in a good amount of oil and keep frying it til almost all your rice is a nice golden brown. When I do my red rice I haven’t been frying my rice that long I may start on days I have time. But this takes time. Least a good ten or fifteen minutes. While it’s frying you can either boil some water on the stove or I just use the sink and microwave. You want to make sure this water is boiling to stir in the powders and they all dissolve completely. Once you got all your ingredients dissolved in your water then you can pour it into your rice slowly

Then let it slowly boil til water is gone. Stirring very little on sides to make sure it’s not sticking to pan. If you stir to much you will end up with sticky and clumpy rice. Make sure to test rice before all the water is gone and if you need to add more water if your rice needs it and more time.

But if you followed the directions you should have very tasty rice that is nice and fluffy and each piece separated from the others.
